The Sons of Norway, Borgund Lodge, helps to keep the Scandinavian heritage alive today by offering classes and meet ups throughout the year.

Anya makes some goodies with Tyrell (Terry) Satrang (and others) of the Sons of Norway group, Borgund Lodge.

The recipes are as follows:
 Fattigman:
6 eggs
16 Tbsp sugar
6 Tbsp thick cream
4 Tbsp melted butter
pinch of salt
1/2 tsp of cardamon seeds OR  1 tsp vanilla

Beat eggs  & sugar until light
Add other ingredients.
Add enough sifted flour to roll thin.
Cut into diamond shape about cookie size.
Make a small slit in the center & turn one corner through the slit.
Heat vegetable oil to 360 degrees,
fry to a golden brown
drain on paper towels,
Dust with powered sugar to serve.

Krumkaka:

1/2 cup unsalted butter, melted and cooling while mixing the following;

4 eggs –  lightly beaten with a fork
1 cup sugar, add to beaten eggs

Now add melted butter along with
2 teaspoons vanilla to eggs/sugar

1 1/4 cups Sifted flour & 2 Tbsp corn starch
Add to liquid mixture gradually, Do Not over mix
Stir in 2 Tbsp milk
Preheat Krumkake, add heaping tablespoon of batter to iron, cook for 20-30 seconds
Remove from iron and roll on cone, allow to cool before removing cone.

Rosettes:

4 eggs, slightly beaten
1/2 tsp. salt
2 tsps. vanilla extract
2 tsps. almond extract
2 tsps. sugar
2 cups flour
2 cups milk
2 Tbsp. cream

Beat eggs slightly with salt and sugar.  Add milk and flour,
vanilla and almond extract.

You can dust them with powdered sugar or swish in granulated sugar
