BoBtanical Pantry – Salsa
This recipe can be successfully reduced or increased, depending on your tomato supply.
18 cups tomatoes
One large onion chopped fine 1-2 cloves fresh garlic, minced (or more to taste)
2 long green peppers, chopped 1 green bell pepper, chopped
2 red and green chili peppers, chopped 2 jalapenos, chopped (remove seeds to adjust heat)
1 cup white vinegar 3/4 cup sugar
1/4 cup salt (or to taste) 2 tsp black pepper
1 tsp alum 1 Tbsp chili powder
2 tsp cumin 12 oz tomato paste (to adjust thickness)
2 tsp dried cilantro or 2 Tbsp chopped fresh cilantro
Mix all ingredients in a large pot. Heat to simmering and simmer 2-3 hours or until desired
Process in canning jars according to canning directions for tomato sauce.
Makes about 8 pints.
