BoBtanical Pantry: Pumpkin Soup

Savory Pumpkin Soup

(use either pumpkin or winter squash)


1 Tablespoon each olive oil and butter

½ cup celery, finely diced

1 small onion, finely diced

2 cloves garlic, mashed

1 Tablespoon tomato paste

1 Tablespoon Old Bay or Cajun seasoning (more or less to taste)

1 Teaspoon Italian seasoning

4 cups cooked, mashed pumpkin or winter squash

            (or 2 15-ounce cans pumpkin)

3 – 4 cups chicken broth

salt and pepper to taste


In a large saucepan, heat olive oil and butter together until it begins to sizzle.

Add celery. Simmer and stir occasionally until softening.

Add onion. Stir with celery, and continue to simmer and stir until mixture is quite soft but not browning.

Add mashed garlic, tomato paste, and seasonings. Cook with vegetables about 3 – 4 minutes until fragrant.

Add pumpkin (or squash) and mix well.

Add chicken broth slowly, stirring into pumpkin mixture until well incorporated, to desired consistency.

Blend well or strain to remove lumps.

Add salt and pepper to taste.
