BoBtanical Pantry: Peasant Pork Supper
RAPID CITY, S.D. – Master Gardener Joe Hillberry is in the kitchen, showing off his peasant stew. Get the recipe below.
PEASANT PORK SUPPER
2 cups potatoes, peeled into chunks
2 cups apples, peeled, cored and cut into chunks
1 cup onion, cut into wedges
2 cups sauerkraut
1 cup wine or apple juice
Trim excess fat from 2-3 pound pork roast or country style ribs.
Place all ingredients except for the wine or apple juice in the bottom of a crockpot. This is for a 3-quart crockpot. Adjust the recipe if you are making more.
Pour 1 cup wine or apple juice over vegetables and apples and lay pork pieces on top. Season pork with salt and pepper.
Cook on low for 6-8 hours or until meat is tender. Serve with a hearty bread.
