BoBtanical Pantry: Garden Minestrone

GARDEN MINESTRONE

¼ cup olive oil

1 cup chopped yellow onion

2 cups chopped carrots

1 ½ chopped celery

4 cloves minced garlic

1 pound ground beef or mild Italian sausage (or combination)

1 cup shredded cabbage

1 cup chopped zucchini (peel if tough)

1 cup frozen peas

1 cup green beans

2 tomatoes, peeled, seeded, and chopped

1 cup tomato puree

1 can red beans, drained and rinsed

3 quarts chicken broth

1 cup small pasta shells (gluten-free is okay)

Saute onion, celery, carrots, and garlic in olive oil until onions are translucent.

Brown the meat, drain, and olive oil, onion, carrots, and celery to the above mix.

Add the rest of the ingredients except for the pasta to the pot. Simmer for 40 minutes or until vegetables are semi-soft.

Add pasta and cook until al dente. Top with fresh parmesan.
