BoBtanical Pantry: Beets

RAPID CITY, S.D. – Now that your harvest is in, it’s time to put that bounty to good use! Master Gardener Mel Glover has some tips that you just can’t beet! 


Yields: 8 pints


4 cups vinegar

4 cups sugar

2 cups beet juice

2 cinnamon sticks

24 whole cloves

Boil beets and add a pinch of salt about 10 minutes before they’re tender. When done, peel and slice beets.

In a pan, combine all ingredients except for the beets and simmer for 15 minutes. This will make a syrup.

Pack beets in jars. Pour on hot syrup. Seal for 30 minutes.
