Yam Casserole

Sweet potato puree, toasted marshmallows

For the sweet potato puree

8 lbs yams, skinned and diced

½ C butter, diced

½ C brown sugar

¼ C honey

1 tsp allspice

12oz cream cheese

6 C mini marshmallows

Kosher salt TT

Begin by preheating your oven to 375 degrees fahrenheit. Once you have all ingredients prepared, combine everything except for the cream cheese and place on a baking sheet. Cover with parchment paper and aluminum foil, then bake for 30-40 minutes, or until very tender. In a food processor, blend the cream cheese in with the sweet potato puree. In the absence of a food processor, mash the sweet potato & cream cheese by hand once it is cool enough to handle. Taste and season with salt if necessary. Next, turn on your oven broiler and add the sweet potato puree to a baking dish. Cover with marshmallows and heat until the marshmallows are lightly melted and browned in spots. Enjoy!
