Acorn Squash

Now that Halloween is over we can focus on the next holiday, which is Thanksgiving. And of course the main focus is typically on the food at the table. This month in healthy eating Anya is focusing on tasty side dishes without all the calories.

– 2 acorn squash

–          1 TBS coconut oil

–          ½ tsp ground cinnamon

–          1 packet truvia

–          Dash of nutmeg

–          ½ tsp salt

Preheat oven to 400 degrees. Take cut acorn squash lengthwise and take insides out the place on a baking sheet. Cover pan with parchment paper. Mix all other ingredients together in a bowl. Brush ingredients on the inside of the squash. Bake about 40 minutes. Let cool and enjoy.
