Sweet and Sour Dressing over Cucumber Noodles

In this Healthy Eating edition, NewsCenter1’s Anya Mueller spiralizes cucumber and tosses them with a sweet and sour dressing to make a delightful side dish.

SWEET AND SOUR DRESSING OVER CUCUMBER NOODLES

Start to finish: 10 minutes

Servings: 2

3 tablespoons fresh lemon or lime juice

3 tablespoons extra virgin olive oil

1/4 teaspoon salt

1/2 teaspoon minced garlic

1/8 teaspoon garlic powder

1/4 cup fresh chopped cilantro

2 tablespoons honey

2 tablespoons vinegar

Toasted sesame seeds and chia seeds for topping

Chopped green onions, crushed peanuts or cashews for topping

Make cucumber noodles with a spiralizer.

Whisk all but the honey, vinegar, and seeds together and pour over noodles.

Let them sit at room temperature to soak up all the dressing or put it in the fridge for later.

Before serving, whisk together honey and rice vinegar and drizzle heartily over the noodles.

Garnish with toasted sesame seeds and/or chia seeds and a sprinkle of cilantro or chopped green onions. Crushed peanuts or cashews are a great addition too. It’s easy to customize your dish based on what you have available or to your taste.  

Serve at room temperature for maximum flavor.
